Through each infusion, the tea leaf captures the changing conditions of the soil and climate over time. By examining tea leaves that were processed decades ago, we can see how dramatically the tea industry has changed. Tea equipment has evolved over the years and aged oolongs provide a historical journey tracing the evolution of the processing methods through the leaf.
In this class, we will sample five teas and open a door to the old world through a discussion of the aging process and methods used.
